I am looking for a spring boot sample with connection to rabbitmq (or general AMQP 1.0 server) via TLS1.2 ... possibly using some already available plugins.

There is currently no AMQP 1.0 support in Spring, only 0.9.1 for RabbitMQ.
You can, of course, use something like the Apache QPID Proton Client in your boot application.
The AMQP 1.0 JMS Spring Boot library provides a spring boot starter that integrates the Apache Qpid JMS Client with Spring JMS. It seems to be actively maintained (in Jan 22)
