How can completely remove the styling of inputs in materializecss? Changing the CSS alone doesn't seem to work as expected.

Use the Materialize class "browser-default".
For example:
<input type="text" class="browser-default"/>
Documentation here: http://materializecss.com/helpers.html#browser-default.
