What is the simple way to query a collection in Firestore and listen for changes in real time?

The documentation is frustratingly confusing. I only want to know how to query and return the results, but the docs show a return of a ListView. It is very confusing for beginners if you pack multiple things into 1 point. Why do you need the ListView here? What if I don't plan on using a ListView in my app?
