What is exactly the difference in performance and method of virtualization between Openstack Nova virtual machines and Openstack Ironic baremetal instances???

There is no easy way of answering this question. It depends heavily on the deployment. In general bare-metal deployments using Ironic will be slightly more performant, but there are many ways to level the playing field between VMs and Bare-metal.
In the end it comes down to what you need. Do you need big beefy machines and don't mind longer boot up times; then bare-metal is probably the choice, but if you don't then VMs offer a ton of flexibility, isolation and much faster bootup speed.
