Why chromosome are represented using binary 8 bit?

I am learning genetic algorithm for the first time. I have a doubt while thinking about why chromosomes are represented using 8 bit binary.It arises when I apply crossover techniques to the bits.I have searched Internet sources but didn't get the right answer.Please help me to find the answer.Thanks in advance !
