Issue with Python Anaconda, TensorFlow, and Mac M1 chip

So the goodnews is I got a new laptop after 7 years with my old MacBook pro, the bad news is I am really struggling to get anaconda set up and get TensorFlow working for an ML project I am working on.

I am following this tutorial to get things rolling with TF: https://github.com/mrdbourke/m1-machine-learning-test

I have made it as far as setting up my env and getting conda installed

conda create --prefix ./env python=3.8
conda activate ./env
conda install -c apple tensorflow-deps

But the next step is where I hit a wall...

python -m pip install tensorflow-macos

Resulting in:

I've been digging into what might be going on with openSSL and how to get this resolved but nothing seems to work. Any suggestions?
